Understanding Ingredient Names

When there can be scores of names for humble sugar, little wonder things are a bit confusing for the poor consumer! Here is a quick low-down on fats, sugars and salts.

(Don’t forget salt! Quite often we focus on sugar and fat to the exclusion of other considerations).

Butter

  1. Vegetable oil/fat
  2. Animal fat/oil
  3. Shortening/margarine
  4. Copha
  5. Lard
  6. Tallow
  7. Coconut oil
  8. Palm oil
  9. Butter fat
  10. Milk solids
  11. Monoglycerides
  12. Diglycerides
  13. Chocolate
  14. Chocolate chips
  15. “Creamed”, “toasted” may indicate added fat. Nuts can add a high fat content to foods.

Sugar

  1. Sucrose
  2. Maltose
  3. sugarLactose
  4. Dextrose
  5. Fructose
  6. Glucose
  7. Mannitol
  8. Sorbitol
  9. Xylitol
  10. Glucose syrup
  11. Corn syrup
  12. Golden syrup
  13. Disaccharides
  14. Monosaccharides.

Salt

  1. Sodium
  2. Na
  3. Monosodium glutamate
  4. MSG
  5. SaltSodium bicarbonate
  6. Sodium lactate
  7. Sodium ascorbate
  8. Sodium metabisulphite
  9. Sodium nitrate
  10. Sodium citrate
  11. Sodium phosphate
  12. Meat/yeast extracts
  13. Hydrolysed.
